This week’s menu makes use of the fresh herbs and vegetables from my garden. I’m using up my latest harvest in these garden harvest meals.
Garden Harvest Meals
While I enjoy growing my own food, I’m a pretty hands-off gardener. The same thing usually happens every year. In the Spring I’m super into my garden, getting things planted and tending to it at least on a weekly basis.
As the Summer turns up the heat I seem to find less and less time to spend in the garden. Luckily, mother nature is pretty good about taking care of things all on her own.
After a few weeks of neglecting my garden I was overwhelmed by how much everything had grown. In fact it was a little overgrown. The grape tomatoes I planted had pretty much taken over half the garden and were creeping into my neighbor’s yard. The bell peppers & sweet peppers were thriving in the heat. Once I cut away some of the grape tomato plant I found the basil to be thriving as well.
Which is why I’ll be making pesto this week. Pesto freezes well so I will make a double batch and freeze the rest for later.
