There are so many wonderful things about pesto. The no-cook sauce comes together in less than 10 minutes. The flavor rich sauce is perfect to add to all sorts of dishes including shrimp & chicken. With pine nuts and olive oil it is packed with healthy fats. It also freezes well.
Shrimp & Spinach Pesto Pasta Recipe
Garlic, basil, pine nuts, parmesan cheese and olive oil blend together to give this dish delicious flavor. You will have extra pesto leftover. Save and freeze the extra sauce to use with other dishes. According to the FIXATE Cookbook, 2 teaspoons of pesto equals 1 teaspoon for your container counts.
This recipe makes 4 servings. Each serving is 1/2 cup pasta, 3/4 cup shrimp, 1 cup spinach and 2 teaspoons pesto.
Ingredients
- 4 oz whole wheat pasta
- 24 ounces shrimp
- 4 cups baby spinach
- 1 teaspoon chopped or minced garlic
- 1/4 cup pine nuts
- 4 cups fresh basil leaves
- 1 cup grated parmesan cheese
- 3/4 cup extra-virgin olive oil
Instructions
- Boil water and cook pasta according to package directions. During the last 2 minutes of cooking add spinach. Drain pasta and spinach.
- While pasta cooks, combine garlic & pine nuts in a food processor or blender. Blend for about 30 seconds or until coarsely chopped.
- Add basil, parmesan cheese and olive oil. Blend for about a minute until smooth.
- Grill shrimp for about 3 minutes on each side or until opaque.
- Top pasta & spinach with shrimp and 2 teaspoons pesto.
Container counts = 1 Green, 1 Red, 1 Yellow, 1 tsp
