We’re saying goodbye to Summer and hello to a new school year this week. We are supposed to start school on Monday but we will see what happens with all the rain we are expected to get from Hurricane Harvey. Since I do my meal planning on Thursdays and grocery shopping on Fridays I was able to get everything I needed before the storm. See what we’re eating this week along with some tips for school meal planning and making mornings easier.
School Meal Planning
The very first step in my 3 Step Menu Planning System is filling in your dates and events. This is a very important step because school nights can get busy with sports and other activities. Planning a wonderful meal that takes too long to prepare will only leave you frustrated & hangry. On nights when you’ve got practices or other activities plan on using your slow cooker. There are even some nights when we pack our dinner to eat on the go. Planning ahead will help you eat healthier and keep you out of the drive-thru (which okay every once in a while).
School Morning Breakfast
We are trying something new for breakfast during the school week. Last year I wrote about letting your child order breakfast the night before in my post 4 Tips to Make School Mornings Easier. This worked for us for awhile but like most things started to fizzle out.
This year to make things hopefully even easier I talked with my son about designating a certain breakfast item for each day of the week. He liked the idea and helped me come up with the items for each day. This way I can have his breakfast ready and we don’t have to have the frustrating: “What do you want for breakfast?” “What is there?” “Same things there always are” conversation. Here is what we came up with:
- Monday – Donuts
- Tuesday – Toaster Strudel
- Wednesday – Waffles
- Thursday – Breakfast Sandwich
- Friday – Cereal
Blue Apron
I’ve got more Blue Apron meals on the menu this week. Some of their meals do take a bit more time to cook (45-60 minutes). But, they recently announced they’ve added more 30-minute meals.
This week I’m cooking Garlic-Butter Shrimp & Corn with Green Bean Salad & Roasted Purple Potatoes. Just the thought of this meal makes my mouth water. I’m also cooking Beef Bolognese with Cherry Tomatoes, Summer Squash & Opal Basil . Follow me on Instagram to see the finished dishes and what my family thinks about them.
