This week I’m raiding my freezer for meal ideas and featuring a new recipe I just posted. But don’t worry, the meals all still fit with the Ultimate Portion Fix eating plan.
At least once a quarter it’s a good idea to use up the food you’ve been storing in the freezer. It doesn’t last forever. No food in your freezer? Then you need to follow my Eat What You’ve Got Challenge. It will help you waste less and stock your freezer. Which makes meal planning even easier.
This week’s meals from the freezer include:
- 3 Bean & Ham Soup – I have leftover ham frozen from Easter and beans from when I made this FIXATE soup a few weeks ago.
- Beef & Bean Burritos- I’m using leftover beans & taco meat I froze from taco night and wrapping it in tortillas I also froze. I’ll thaw both and then heat the burritos topped with cheese in the oven. After they are done cooking I’ll add fresh salsa and some cilantro from my garden.
- Shrimp & Sausage Gumbo- I froze this a few months ago when I made this FIXATE recipe. I will just thaw in the refrigerator and reheat.
