This week’s menu follows the Ultimate Portion Fix Eating Plan. I’m trying out a new FIXATE2 recipe and cooking up an Instant Pot favorite. See what’s on this week’s menu.
I froze our leftover Easter ham and plan on using it in the 3-Bean and Ham Soup from the FIXATE2 Cookbook. We had quite a bit of ham left over. I chopped the ham up, measured out what I needed for the recipe, put it in a freezer bag and labeled it so I could easily find it. I divided the rest of the chopped ham into 2 other freezer bags. It’s better to freeze things in smaller portions. That way you’re not thawing out more than you need. Thawing and refreezing can lead to a loss in food quality or spoilage.
The other recipes on this week’s menu are some of our favorites. My husband requested the Instant Pot Meatloaf from Confessions of a Fit Foodie. It’s so easy to make and I feel like an Instant Pot pro whenever I do. I’ve made it with both regular and sweet potatoes. Both come out delicious. The Teriyaki Salmon is a quick & easy healthy favorite of mine. And my 10 year old son even likes it. It’s a complete meal that comes together in less than 30 minutes.
