If you’re looking for a quick & easy weeknight meal that is healthy too, look no further. With just a couple of ingredients this Easy Teriyaki Salmon with Soba Noodles comes together in a snap. Clean up is simple too.
Salmon is a great healthy protein to have in your diet. According to Healthline.com salmon is rich in high quality protein, omega-3 fatty acids, B Vitamins, potassium, selenium and antioxidants.
Soba noodles are made from buckwheat and loaded with essential amino acids. They are a great whole grain swap from regular pasta.
Look for low-sodium teriyaki sauce to avoid bloating and other sodium-induced side effects.
Steam sugar snap peas to round out this healthy meal. To save time I like to buy the pre-washed bag of snap peas and steam them in the microwave. They only take about 3 minutes to cook.

- 4 Salmon Fillets
- 8 oz Soba Noodles
- Low Sodium Teriyaki Sauce
- Snap Peas
- Boil water for noodles
- Preheat oven to 400F
- Cook noodles according to package directions
- Rinse salmon fillets and place in baking dish
- Sprinkle salmon with salt & pepper
- Bake salmon for 12-15 minutes or until fish flakes easily with a fork
- While salmon cooks steam snap peas
- Arrange salmon fillet on top of soba noodles and drizzle with teriyaki sauce. Serve snap peas on the side.
For faster cooking use bagged, washed & ready to eat snap peas that you can steam in the microwave.
