It’s baack! Now that I’ve completed the Elimination Diet Meal Plan I’m back to planning my own menus. And what better way to start than with a crazy travel week menu?!? This week’s menu has a mix of things my husband and son will be eating while and I’m gone and snack planning for myself. Travel & Meal Planning
My travel schedule is a bit hectic this week. On Monday I’m off to Vegas for a work conference. On Wednesday I’m making a pit stop at home, switching out my suitcase and heading back to the airport to travel to Nashville for my first big blog conference.
Even though I won’t really be home all week I’m still meal planning for my family. Why? So I can feel like they are taken care of while I’m away. I’m setting them up by making the shrimp & sausage gumbo recipe from the Fixate Cookbook for lunch and homemade chili for dinner on Sunday before I leave. Then they can enjoy the leftovers for dinner during the week while I’m gone. I do have an extra easy meal my husband or even son can make on the menu as well. I will also leave them with sandwich making supplies.
I’m also planning out snacks for myself on the menu. It can be hard when you’re traveling to stay on track with your eating. Hard, but not impossible. That’s why a little planning makes all the difference. I will bring along my apples with little single serve peanut butter containers and a bag of trail mix. Trail Mix Recipe
This easy trail mix recipe is the perfect snack to take with you on the go or while traveling. You can change out the ingredients any way you like to include your favorite nuts, seeds & dried fruit.
- 3/4 cup Pecans
- 1/2 cup Pumpkin Seeds
- 1/2 cup Sunflower Seeds
- 1/2 cup Coconut Flakes
- 1/2 cup Dried Blueberries
- 1/2 cup Plantain Chips
