What’s the best way to save time in the kitchen? By cooking once and eating twice. Check out what is on this week’s portion fix meal plan and how I save time by multi-purposing meal ingredients.
Cook Once, Eat Twice
It takes the same amount of time to cook one serving of rice as it does four. If you’re looking to save time in the kitchen, think of ways you can cook one ingredient and use it more than once. This week I’m making pesto to use in both a shrimp dish and chicken dish. One batch of sauce for two different meals.
You could also do the same with your proteins. For example, you could grill chicken breast and use half on top of a salad and the other half shredded into chicken enchiladas. Ground meat is also great for batch cooking. Brown two pounds and save one for spaghetti and the other for tacos.
