I’m using some of the veggies from my garden for this week’s meal plan. Check out what is on this week’s menu and what garden goodies I’m using.
I love growing my own food. I find it pretty amazing. Probably because I’m a pretty hands off gardener.

I plant my garden and then check in on it once a week and do any necessary weeding or pruning. I’m always surprised when I come out and find new veggies growing. I’ve had really good luck with bell peppers and gypsy peppers this year. And with all the rain we got I’ve had some success with cucumbers.
That’s why this week my meal planning focus is on using things from my garden:
- Stuffed Bell Peppers
- Peppers & Hummus
- Cucumber & Tomato Salad
