Breakfast Meal Prep
Breakfast really is one of the most important meals of the day. It literally gets your metabolism going and breaks your overnight fast.
If you’re not much of a morning person, like me, preparing a wholesome, healthy breakfast while you’re hurriedly trying to get ready for the day can seem impossible. That’s why I suggest doing some breakfast meal prep.
Spending a bit of time on the weekend to prepare a healthy breakfast ahead of time will ensure that you get a great start to your day.

Sweet Potato Breakfast Scramble Recipe
This recipe is my take on a recipe from the Elimination Diet Meal Plan. I completed the plan to test my food sensitivities and fell in love with so many of the recipes. The creator of the meal plan, Naturopathic Doctor Dr. Kimberley O’Brien, provides a wealth of information about the ingredients and why they are important for your health.

I’m always looking to make things easier so I made a few tweaks to the original recipe to make it quicker to prepare and so it fits with my Portion Fix meal plan.
This recipe makes 4 servings. Each serving is 1/2 cup sweet potatoes, 3/4 cup turkey sausage crumbles, 1 cup spinach & mushrooms and 1 teaspoons olive oil.

Ingredients
- 2 small sweet potatoes
- 4 tsps olive oil (divided)
- 1/2 tsp garlic powder
- 1 1/4 cups pre-cooked turkey sausage crumbles
- 2 cups baby spinach (or kale)
- 2 cups mushrooms
- Salt
- Pepper
Instructions
- Heat oven to 375
- Peel and chop sweet potatoes
- Place sweet potatoes on baking sheet, drizzle with 2 tsp olive oil, sprinkle with garlic powder. Bake for about 40 minutes stirring halfway through.
- While sweet potatoes bake, heat remaining 2 tsps of olive oil in a sauce pan. Add Spinach (or kale) and mushrooms and saute for about 5-6 minutes.
- Add turkey sausage crumbles to veggies and heat through.
- When sweet potatoes are finished cooking combine with veggies and turkey sausage crumbles.
Container counts = 1 Green, 1 Red, 1 Yellow, 1 tsp
