This week in my meal prep group we’re focusing on prepping snacks and making healthy foods convenient. Check out what is on this week’s meal plan and what snacks I’ll be prepping this week.

Making Healthy Convenient
Why do we find ourselves grabbing chips, cookies and other processed foods to snack on? Because it’s convenient. It’s way easier to grab a bag of chips than it is to wash and chop up some fruits and vegetables to eat as a snack.
That is unless you take a little time at the beginning of the week to make those healthier foods a bit more convenient.
There are two ways to do this:
- Buy pre-washed and chopped fruits & veggies and portion them out
- Wash and chop your own fruits & veggies and portion them out
I like to do a mix of both.
This week I will be prepping and portioning my breakfast snacks- Sweet Potato Breakfast Scramble & Cauliflower Fried Rice with Breakfast Potatoes. I’ll cut up the potatoes myself. But I buy pre-sliced mushrooms, pre-washed baby kale, pre-shredded carrots and riced cauliflower.
For my lunch snacks I will wash & chop my fruit. I like to buy mini carrots in pre-portioned bags. My grocery store usually has pre-chopped jicama that I will portion out as well as guacamole. I also like to buy hummus that comes in single serving containers.
Now, you do pay for the convenience of having these foods already prepped. But at some point time becomes money and where I’m at right now in life, I’m willing to pay money to save time in the kitchen.
