Strawberry Spinach Chicken Salad with Quinoa

Sometimes coming up with a way to use your portion control containers results in a delicious new recipe.  That’s how this healthy Strawberry Spinach Chicken Salad with Quinoa came about.  It only uses a handful of ingredients and comes together quickly.

Strawberry Spinach Chicken Salad with Quinoa

This Strawberry Spinach Chicken Salad with Quinoa is usually on my weekly meal plan every Sunday.  It combines almost all the containers for 80 Day Obsession, 21 Day Fix or LIIFT4.

To tell you the truth I just thought it sounded like it would be good.  I really never actually made it until now.  I’m great at making the meal plan but sometimes, especially on the weekend, I don’t follow it so well.

So glad I finally made this recipe.  I will definitely be making it again and not just putting it on the menu.  It’s delicious and super filling.

You can also add a blue container of chopped pecans. My husband’s contribution to the recipe.  He decided he wanted a little added crunch.

To save time pick up a freshly cooked rotisserie chicken from the grocery store. Take all the meat off your rotisserie chicken while it’s still warm.  This will make the meat easier to remove.

Tip: Cooking quinoa in chicken broth instead of water gives it a delicious, savory flavor.

Ingredients

  • 1 Green Container Spinach
  • 1 Purple Container Strawberries
  • 1 Red Container Shredded Rotisserie Chicken
  • 1 Yellow Container Cooked Quinoa
  • 1/2 Orange Container Olive Oil
  • 1/2 Orange Container Balsamic Vinegar

Instructions

  1. Cook quinoa according to package instructions
  2. While quinoa cooks chop strawberries
  3. Combine spinach, strawberries, shredded chicken, quinoa
  4. Mix together olive oil & balsamic vinegar & drizzle over salad
