Brunch is the perfect celebratory meal for any party or shower. If you’re looking to indulge without feeling guilty this healthy brunch menu is for you.
I recently hosted a brunch themed bunco party for my friends. The month before we were talking about how we’re all trying to eat healthier so I decided to create a healthy brunch menu using only FIXATE recipes. My friends really enjoyed the menu. You know the food is good when people ask for the recipes!
FIXATE Brunch Recipes
The FIXATE Cookbook was developed by Beachbody Trainer Autumn Calabrese. The recipes are meant to be used with her color coded portion control nutrition system featured in 21 Day Fix and Ultimate Portion Fix. If you have Beachbody On Demand then you have access to the original FIXATE cookbook under the nutrition tab. You can also purchase the original FIXATE cookbook through Beachbody or Amazon. The FIXATE2 Cookbook is included with the Ultimate Portion Fix program. You can now also purchase FIXATE2 through Beachbody.
The great thing about Ultimate Portion Fix is that you can still enjoy treats like dessert and wine.
Healthy Brunch Menu
When putting together a brunch menu for a shower or party you want to offer a variety of protein, veggie, carb and fruit options so there is something for everyone. These recipes can be found in the FIXATE & FIXATE vol. 2 Cookbooks.
- Maple Rosemary English Muffin Sausage Sandwiches
- Sweet Potato and Ham Stuffed Mushrooms
- Bacon Wrapped Asparagus
- Veggies & FIXATE Ranch Dip
- Strawberry Mango Salsa with Cinnamon Pita Chips
- Chocolate Caramel Apple Nachos
- Spring Sangria
Maple Rosemary English Muffin Sausage Sandwiches
You can make the sausage patties ahead of time and keep in the fridge. Cook the patties and keep warm before serving. The English muffins are best freshly made. The original recipe calls for serving an egg on the sandwich but for a party it’s easier to omit the egg.
Sweet Potato and Ham Stuffed Mushrooms
These are simple to make and so delicious. Make the filling the day before. Then stuff and bake mushrooms just before serving.
Bacon Wrapped Asparagus
This healthy side looks fancy but is so simple to make. And it includes bacon! Thicker asparagus stalks are better for this recipe. Smaller stalks tend to over cook before the bacon is ready. You can assemble this dish the day before and pop it into the oven just before serving.
Veggies and FIXATE Ranch
This FIXATE Ranch dip counts as a free container! Greek yogurt gives it a thick and creamy texture. You can make it the day before and store it in the refrigerator.
Strawberry Mango Salsa with Cinnamon Pita Chips
This fruity salsa is so refreshing! I love the mix of fresh mint & cilantro. You can make the salsa the day before and store in the refrigerator.
They used to sell cinnamon pita chips but I can’t find them anymore. So I make my own. To make cinnamon pita chips:
- Place plain pita chips in a zip top bag
- Next, spray chips with cooking spray (I used coconut oil spray)
- Then sprinkle with coconut sugar & cinnamon
- Shake bag to coat
Chocolate Caramel Apple Nachos
These are so easy to make and will satisfy any chocolate lover. You can make the caramel sauce the day before. To save prep time buy pre-sliced apples. Most pre-sliced apples are treated with a citrus solution to keep them from browning.
Spring Sangria
No brunch is complete without a delicious fruity beverage. This sangria includes strawberries, kiwi and blood orange. The fresh lavender garnish infuses the cocktail with a delightfully soothing taste.
