This Asian Noodle Bowl has the taste and texture of regular noodles without any of the carbs. It’s loaded with veggies and works well as a 4 Week Gut Protocol plant-based meal.

Gluten-Free Shirataki Noodles
I love noodles! Unfortunately, regular flour and wheat noodles don’t love me back. They’re one of the foods that cause bloating for me.
During my Elimination Diet I discovered that all carbs don’t affect my body the same way. For example, gluten-based noodles cause bloating while brown rice doesn’t. Gluten is one of the items eliminated during the 4 Week Gut Protocol.
As I was shopping for gluten-free items I came across shirataki noodles. They are made from konjac which is a root vegetable that is high in fiber. They don’t really have any flavor of their own, but take on the flavor of any sauces you add. I think they work well in place of rice noodles in Asian dishes but I wouldn’t use them as a substitute for regular spaghetti.
Tip: Be sure to rinse and dry the shirataki noodles well. I put them in a strainer, run water over them and then dry throughly with a paper towel. I hold them in the paper towel over the sink and squeeze out the excess water.
Asian Noodle Bowl Recipe
Noodles that count as a green container are my kind of noodle. This meal works great as a make-ahead 4 Week Gut Protocol plant-based lunch. Rice cakes make a crunchy side if you need to add carbs.

The honey ginger dressing I like is a little high in sugar but it’s oh so good and made with clean ingredients.
Tip: Use pre-shredded carrots and frozen edamame you can steam in the microwave to make meal prep even faster
Ingredients
- 1 cup Shirataki Noodles
- ½ cup chopped cucumber
- ½ cup shredded carrots
- ¾ cup edamame
- 1 tsp sesame oil
- 2 TBS Honey Ginger Dressing (Brianna’s Organics)
- 2 rice cakes (optional)
Instructions
- Drain and rinse noodles. Dry with a paper towel.
- Heat edamame according to package directions.
- Toss together noodles, cucumber, carrots, edamame, sesame oil and dressing.
- Enjoy with a side of rice cakes.
