If you’re following Portion Fix or 4 Week Gut Protocol one of the easiest ways to get your containers in, is tossing everything together in a bowl meal. Southwest Salad Bowl Recipe
I came up with this bowl meal recipe when I was trying to find Vegan lunch ideas while following the 4 Week Gut Protocol Meal Plan. My husband loves it too. It’s simple to make and works well for meal prep.
Tip: If you plan to meal prep this recipe I suggest keeping the beans and rice separate from the veggies. When you’re ready to eat, reheat the beans and rice, then mix in veggies and drizzle with dressing.
Ingredients
- 1 cup mixed greens
- ½ cup chopped cucumber
- ½ cup halved cherry tomatoes
- ¾ cup black beans
- ½ cup brown rice
- 1 tsp olive oil
- 2 TBS Primal Kitchen Cilantro Lime salad dressing
Instructions
- Cook brown rice according to package directions.
- Heat black beans.
- Toss together rice, beans, mixed greens, cucumber, tomatoes, olive oil, dressing.
- Enjoy!
