My son is home from camp this week and heading back to school. On this week’s back to school meal plan I’m featuring some of his favorite meals. They come together quickly and are kid-approved.
Back to School Meal Plan
Adjusting to a new school year can be hard. That’s why I’ve chosen meals this week that are easy to make and my son loves.
Like most kids his age, his favorite meal is chicken nuggets with macaroni and cheese. If you’re looking to make it a little healthier you could do grilled nuggets with whole wheat macaroni & cheese. I also always add some green beans on the side. He has to finish his green beans before he can have more nuggets or macaroni.
Another favorite of his, the Mongolian Beef, cooks up so tender in the Instant Pot. He calls it the “meat with the good gravy.” After the meat cooks you add in a cornstarch slurry and it does make some really good gravy. I usually serve the Mongolian Beef with brown rice and steamed mixed veggies.
A final favorite of his this week is the Chicken Parmesan. It’s a recipe I adapted from Cooking Light that I’ve literally been making for years. Breaded chicken is covered in marinara sauce and topped with melty Provolone cheese. I would have never thought of serving it with a side of broccoli but it is so good. Especially when the cheese finds its way on top of the broccoli too. A great way to get your kids to eat their veggies. (See more secrets here)
