Easy Chicken Parmesan Meal
This recipe has been a family favorite for years. It’s an adaptation of Cooking Light’s Herbed Chicken Parmesan. There are few steps from the original recipe that I omit to get dinner on the table a little quicker. I like to use thin sliced chicken breast since they cook faster and more evenly. You can also purchase broccoli that steams in the bag to make meal prep quicker.
If you’re following a Beachbody program that uses portion control containers you will want to pay close attention to the sugar content in your pasta sauce. The food list puts store-bought pasta sauce in the purple container category due to added sugars. But if you use a pasta sauce with 5 grams of sugar or less you can count your pasta sauce as a green! Ingredients
- 4 Thin Sliced Chicken Breasts
- 1/2 Cup Grated Parmesan Cheese, divided use
- 1/2 Cup Italian Bread Crumbs
- 2 Large Egg Whites
- 1 Tablespoon Olive Oil
- 2 Cups Tomato Basil Sauce
- 4 Slices Provolone Cheese
- 8 oz Uncooked Orzo or other Whole Wheat Pasta
- 2 Cups Broccoli
Directions
- Boil water and cook pasta according to package directions.
- Pre-heat Broiler.
- Heat olive oil in a large nonstick skillet over medium-high heat.
- Combine 1/4 cup Parmesan cheese and Italian breadcrumbs in a shallow dish. Beat egg whites in another shallow dish. Dip each chicken breast in egg whites then dredge in breadcrumb mixture to coat.
- Add chicken to skillet and cook 5 minutes on each side or until chicken is done.
- While chicken cooks steam broccoli.
- Pour sauce over chicken in skillet. Sprinkle remaining 1/4 cup Parmesan cheese and place provolone over chicken. Place skillet into oven and broil for 2 minutes or until cheese melts.
- Place pasta on plate. Top with chicken and sauce. Serve broccoli on the side.
*Tip: If you don’t think your kids will eat broccoli try topping it with cheese.
