This healthy Southwest Chicken Salad came about when I challenged myself to come up with a menu using only the top half of the Transform :20 food list. So, while it’s delicious & easy to make you can also feel good about how nutritious it is too.
Each Beachbody fitness program also comes with a nutrition plan. Many of the nutrition plans use portion control containers. Each colored container represents a different food category:
- Red=protein
- Green=veggies
- Yellow=carbs
- Purple=fruit
- Blue=healthy fats
- Orange=seeds & dressings
- tsp=oils & nut butters
The food list for each category is arranged with the most nutrient-dense items at the top of the list. I came up with this salad when I challenged myself to create a menu only using the top half of the food list. I’m very happy with the way it came out and look forward to adding it to my menu rotation.
Easy, Healthy Southwest Chicken Salad
To make this salad come together even faster I suggest using rotisserie chicken. Be sure to debone your chicken while it is still warm. It makes getting the meat off the bone so much easier.
This recipe is also great for meal prep. Just keep the salsa separate until you’re ready to eat.
Ingredients
- 1 cup Salad Mix
- 3/4 cup Chicken Breast
- 1/4 cup Corn
- 1/4 cup Black Beans
- 1 TBSP Fresh Salsa
- 1 tsp Olive Oil
- 1 tsp Cilantro
Instructions
- Place salad mix on serving dish or container
- Next, top with Chicken Breast
- Then, add corn & black beans
- Drizzle salad with olive oil and Salsa
- Mix salad together
- Garnish with Cilantro
Container counts = 1 Green, 1 Red, 1 Yellow & a tsp
Optional additions
The great thing about this salad is that you can add additional containers to meet your meal plan needs. Some examples are listed below.
- 1 Orange container dressing
- 1 Blue Container shredded cheese
- 1 Blue Container Avocado
