Easy Chicken Salad with Fruit & Nuts

Chicken salad is one of those recipes that everyone does a little bit differently. I like mine with red grapes, pineapple and pecans. This easy chicken salad is a healthy recipe that includes portion control container counts.

Easy Chicken Salad

Mix up a double or triple batch of this easy chicken salad and enjoy it all week. It’s great for meal prep. You can serve it atop salad mix, in a pita or lettuce cups.

You can use freshly chopped chicken breast or canned. I used canned in this recipe. If you’re using canned chicken breast be sure it is in water and not oil. Same with the pineapple. If you use canned pineapple be sure it is in it’s own juice and not in heavy syrup to avoid extra sugar and calories.

Ingredients

  • 3/4 Cup Chopped Cooked Chicken Breast
  • 1/3 Cup Chopped Pecans
  • 1/2 Cup Chopped Red Grapes
  • 1/2 Cup Pineapple Chunks or Tidbits 
  • 1 tsp Low Fat Mayo

Instructions

Combine Ingredients  & Mix

Container counts =  1 Red, 1 Purple, 1 Blue & a tsp

Serving Suggestions

  • Chicken Salad Pita- serve on a whole wheat pita (container count add 1 Yellow)
  • Chicken Salad on Greens- serve atop mixed greens (container count add 1 Green)
