This healthy & quick Chinese chicken salad will be your go-to meal of the Summer. Juicy, mandarin oranges add a refreshing burst of flavor while almonds and chow mein noodles add a delicious crunch. Plus, if you’re following Portion Fix it’s got all the containers.
This Chinese chicken salad is inspired by the salads I ate in LA many, many years ago. I went out there a couple times with a friend and some students to take dance classes. Way back when I taught dance. So long ago that the restaurants we got these delicious salads, Koo Koo Roo and California Chicken Kitchen, are no longer in business. I’ve been making this copy cat version ever since.
Healthy & Quick Chinese Chicken Salad
Grabbing a rotisserie chicken from the store makes meal prep quick and easy. Debone your chicken while it is still warm. Once you’ve put the chicken in the fridge it’s a little harder to pull off the bone.
I highly suggest chilling the mandarin oranges in the fridge before serving.
This recipe uses all the Portion Fix containers. Although it’s only half a purple, half a yellow and about half a blue. If you’re following the program be sure to choose mandarin oranges in their own juice with no sugar added instead of the ones in heavy syrup. I’m not even going to pretend chow mein noodles are on the food list but they are so good and add a nice crunch to the salad. You can choose to leave them out. If you are going to add them I would count them as a yellow.
Ingredients
- 1 cup Salad Mix
- 1/2 cup Mandarin Oranges
- 3/4 cup Chicken Breast
- 2 TBSP Slivered Almonds
- 1/4 cup Chow Mein Noodles (optional)
- 2 TBSP Asian Dressing
Instructions
- Place salad mix on serving dish or container
- Next, top with Chicken Breast
- Then, add mandarin oranges
- Drizzle salad with asian dressing
- Top with almonds and chow mein noodles
Container counts = 1 Green, 1 Red, 1/2 Purple, 1/2 Blue, 1/2 Yellow, 1 Orange
