This recipe came about when I was trying to use up leftovers in my freezer. I threw together what I had and came up with this easy beef burrito recipe. My family loved it and it’s now part of our regular rotation. Portion Fix container counts included.
Leftovers
I like to try and use up all the food we have. Normally I’ll eat leftovers from dinner for lunch the next day. Even so, we still end up with leftover food. Instead of just throwing perfectly good food in the trash I try to freeze what I can.
After taco night my husband likes to throw the refried beans and taco meat together. At first I wasn’t quite sure what to do with this mixture. Then I noticed we had some wheat tortillas in the freezer and some shredded cheddar in the fridge. Ding! Beef & Bean Burritos!
Easy Beef Burrito Recipe
This easy beef burrito recipe comes together quickly and is a great way to use up leftover taco meat. When using frozen leftover cooked meat be sure to put it in the fridge the night before to thaw. If you don’t have leftover taco meat you can always use freshly cooked seasoned lean ground beef. You’ll just need to factor in a bit more cooking time to cook the meat first.
To round out the meal sauté some sliced green bell peppers and onions. The sautéed vegetables add fresh flavor to your meal, especially if you’re using frozen leftovers. Sometimes freezing foods can cause them to lose flavor. Adding fresh foods to frozen, like the salsa that tops the burrito, adds flavor.
This recipe makes 4 servings. Each serving is one burrito topped with 1/3 cup cheese and 1/2 cup salsa and a 1/2 cup peppers & onions.
Ingredients
- 4 whole wheat tortillas
- 3 cups lean ground taco meat (cooked)
- 1 1/3 cups shredded cheddar
- 2 cups salsa
- 1 cup sliced green bell pepper
- 1 cup sliced onions
- 4 tsp olive oil
Instructions
- Heat oven to 350°
- Fill each tortilla with 3/4 cup taco meat and a pinch of cheese
- Roll filled tortillas and place in baking dish
- Top with remaining shredded cheddar
- Bake at 350 ° for 20 minutes
- While burritos bake, heat olive oil in a pan
- Add sliced bell pepper & onions and sauté until tender
- Once burritos are done cooking, remove from oven, top with salsa and serve with sautéed peppers & onions
Container counts = 1 Green, 1 Red, 1 Yellow, 1 Blue, 1 tsp
If you’re using a mix of taco meat and beans be sure to count about an extra 1/2 yellow for the beans.
