If you’re following Portion Fix or 4 Week Gut Protocol one of the easiest ways to get your containers in, is tossing everything together in a bowl. Start with a base of veggies, add in a protein, a carb and drizzle with a tasty dressing. I enjoy the dressings from Primal Kitchen. They’re made with clean ingredients and have minimal added sugars.
Bowl meals are a simple way to create a filling dish that is as healthy as it is delicious. Plus, they’re easy to take on the go.
Chickpea Salad Bowl Recipe
Chickpeas are the new cauliflower. There’s nothing they can’t become. They’ve made their way into some of my favorite gluten-free foods, like brownies and pasta. Chickpeas are a great source of protein. In this recipe, the air-fryer gives them a nice crispy texture.
Ingredients
- 1 cup mixed greens
- ½ cup chopped cucumber
- ½ cup chopped tomato
- ¾ cup canned chickpeas
- 1 tsp olive oil
- 1 tsp garlic powder
- ½ cup brown rice
- 2 TBS Primal Kitchen Cilantro Lime salad dressing
Instructions
- Drain chickpeas. Place in air fryer with 1 tsp olive oil and 1 tsp garlic powder, air fry at 400 for 8 minutes.
- Cook rice according to package directions.
- Toss together mixed greens, cucumber, tomato, air fried chickpeas and brown rice.
- Drizzle with dressing.
- Enjoy!
