This Asian Rice Bowl is the perfect make ahead, meal prep lunch. Just toss everything into a bowl. It works well as a plant-based 4 Week Gut Protocol meal.
Meal Prep
If you’re following Portion Fix or 4 Week Gut Protocol one of the easiest ways to stay on track is by doing a little meal prep. The quickest meals to prep are bowl meals. Start with a base of veggies, add in a protein, a carb and drizzle with a tasty dressing.
Asian Rice Bowl
This recipe is a simple, filling meal that is as healthy as it is delicious.
Ingredients
- 1 ½ cups broccoli slaw
- ½ cup cucumber
- 1 cup brown rice
- ¾ cup edamame
- 1 tsp sesame oil
- 2 TBS Honey Ginger Dressing (Brianna’s Organics)
Instructions
- Cook Rice according to package directions.
- Heat Edamame according to package directions.
- Saute Broccoli Slaw in Sesame Oil.
- Toss together cooked Rice, Edamame, Broccoli Slaw, and Cucumber.
- Drizzle with Dressing.
- Enjoy!
