We are soaking up the last week of Summer with a mini beach getaway and some other fun plans. Read on to see how to meal plan around vacations and other activities.
Summer Send Off
Next week my son starts back to school. So we decided to get one last beach trip in. We’re heading down to Galveston for two days. We’re going to spend a day at Schlitterbahn and a day at the beach. Since it’s just the three of us we’re staying at a hotel instead of renting a beach house like we did earlier this Summer. (Read all about planning a family beach vacation here.)
We’ve also got plans to attend the Texans pre-season game against the Patriots. I got my husband side-line experience tickets for his birthday. We’re all really looking forward to it!
My husband and I are also going to the Cold Play concert on Friday. A birthday present he got for me several months ago. I’m so excited!
Vacation Meal Plan
To save some money and calories we plan on packing a cooler to take with us to Schlitterbahn and to the beach. I love that my favorite water park lets you bring in your own picnic lunch. I plan on packing grapes, oranges, string cheese and almonds for snacks. We are also going to pack sandwiches and chips for lunch. Being out in the sun and water really works up and an appetite and I like the idea of having healthy snacks on hand. I plan on packing everything in a small cooler and freezing water bottles to keep things cold. We can also take the cooler up to our room for easy access to snacks.
Even if you plan on eating out during vacation you still want to have a game plan for snacks.
I’ve planned some easy meals for when we return from vacation that don’t require much prep or clean-up.
