This is the first week all Summer where we have absolutely nothing going on. Do you know how exciting this is? There were things we were supposed to do this week – a flag football camp for my son, dentist appointments and Bunco night at our house. But then a last minute trip came up so I moved everything around. The trip got cancelled and I chose to leave the calendar open. I think sometimes, especially during the Summer, you need to give yourself a break. This weekly menu is filled Summery meals that are easy to prep and clean up.
Use What You’ve Got
Is it time for a kitchen clean-out? Every so often I like to thoroughly clean out my fridge, freezer and pantry. It helps me get rid of the expired foods cluttering my kitchen and lets me see what we need to use up. I feel so guilty when we waste food. I do try to freeze things, like my Grandmother taught me, but they also only last so long in the freezer (about 3 months).
After my clean out I make a list of all the foods that we have available in the fridge, freezer and pantry and try to find recipes to use what we have.
Summery Meals
One of my favorite Summer recipes is Tropical Chicken Packets. Pineapple gives them a Summery flair. Cooking the chicken in foil packets makes clean up a breeze.
I’m also excited to try out a new recipe from one of my favorite bloggers, Key West Shrimp Bowls with Mango Salsa. The pictures of her recipes make my mouth water and they’re healthy.
Foil Packets
After I put the chicken packets on the menu I did a Pinterest search for Cod recipes to use up some frozen fillets in the freezer. This Baked Lemon Cod in foil stood out to me. I guess this week’s theme is foil packets.
