This week’s menu came together fairly easily. Blue Apron’s meals this week are too enticing to pass up. They had me at Lo Mein & Shrimp. To round out the meal plan ideas for the rest of the week I wanted simple Summer meals. I chose a favorite Cooking Light grilled meal and a new one pan dish I found on Pinterest.

Blue Apron
I’ve received a couple of Blue Apron shipments (read my full review here). We’ve enjoyed all of the meals we’ve received. The recipes are full of fresh ingredients, including some we’ve never tried before. The only drawback is the meals take a bit of time to prepare (45-60 minutes). But, since it’s Summer and we don’t have any activities to run to in the evenings I’ve got the time to cook. Especially when it includes Lo Mein. I might have a slight obsession with noodles.
The first meal I’m cooking is the Beef Lo Mein with black garlic and sugar snap peas. The second meal is Shrimp and Provencal-Style vegetables with summer squash & aioli.

Summer Meals
Cooking meals in foil a few weeks ago (see meal plan ideas here) showed me there is no easier way to cook and clean up. This week I wanted to include some recipes cooked on the grill. I ended up choosing a Cooking Light favorite, Grilled Peaches and Pork. Grilling the peaches gives them a rich, vibrant flavor.
While I was searching Pinterest for recipe ideas I came across this One Pan Pesto Chicken, Tortellini and Veggies recipe. I’ve got some pesto I made with the basil from my garden. One pan meals also mean easy clean-up which is what I’m looking for so we can spend more time soaking up the last few weeks of Summer instead of soaking dishes.
