Summer is finally here!!! Since we were on vacation last week this is our first official week of Summer at home. I tried to find some Summer friendly meals for the weekly menu this week.
Garden Fresh
Our garden really took off while we were away on vacation. It was fun to see everything that had grown while we were away. I put meals on the menu that will help us make use of the goodies from the garden. The Chicken Caprese is a great example. It uses the grape tomatoes and basil from the garden. I’ll probably add in some cucumber as well. There’s just nothing like homegrown veggies.
Kids Snacks
I also stocked up on snacks and lunch items for my son & his friends this week. I’ve got your typical chicken nuggets, hot dogs, spaghetti-o’s and grilled cheese supplies for lunch. For snacks I got applesauce, strawberries, yogurt tubes, string cheese, goldfish, fruit snacks and of course popsicles.
I’ve talked to him about following an eating schedule so he’s not just snacking all day long. It’s the same one I follow, so I just need to remember to give him a snack when I grab one:
- 7:00 Breakfast
- 10:00 Snack
- 12:00 Lunch
- 3:00 Snack
- 6:00 Dinner
