We are back from vacation and still in a bit of vacation fog. But somehow I managed to put together a menu for the week and make it to the grocery store. This week’s menu has a vacation favorite.
Vacation Fog
While we are currently functioning I definitely feel like we are still in a bit of a vacation fog. Hawaii time is 5 hours behind our time zone. On our way there and back I like to say we time travelled. We left Kauai at 8:00 pm Hawaii time and landed in LA at 4:30am California time. From there we landed in Houston at 11:00am Texas time.
After unpacking and starting some laundry and going through the mail and hundreds of emails, we went to bed around 11:30pm. We didn’t wake up until 10:00am on Sunday. My son didn’t wake up till 11:00. We all caught up on some much needed rest.
Sunday included more laundry, planning out this week’s menu and a trip to the grocery store.
Vacation Favorite
Our hotel package included a daily breakfast buffet. The offerings included everything from an omelet station, cereal, eggs, potatoes, bacon, sausage, assorted toast, muffins and the freshest fruits. But my favorite was definitely the waffles & pancakes with macadamia nuts and coconut syrup. So much so that I brought back macadamia nuts and coconut syrup to enjoy at home. You’ll find them on this week’s menu!
