We’ve reached week 3, the final week of the 21 Day Fix! Woohoo! I’d love to tell you that I’ve been sticking with the meal plans exactly as I laid them out but that would be a total lie. The first week I went to Dallas for some work meetings. I did my best to make healthy choices on the way up. I even brought & drank my Shakeology for breakfast and some almonds as a snack. However, a lunch meeting at a restaurant I was meeting with had me eating a fried chicken sandwich, fries and some delicious custard for dessert. I’m not complaining, it was delicious, just being honest. On the long drive home I may have eaten a bag of chips. No worries, I got back on track the next day.
Week 2 of my 21 Day Fix Meal Plan didn’t go quite as planned either. I didn’t realize my husband would be out of town for work. Cooking all the meals I planned out for just B and I seemed like a waste. Thank goodness for the freezer. I ended up cooking some, freezing the leftovers and the rest of the meats for this week. We hit up Chick-fil-a one night after football practice (I got a salad and only ate a couple of B’s fries) and one of his homework assignments was to order pizza in order to learn about fractions. Best homework assignment ever! All of this to say, in my opinion it’s great to have a plan but don’t beat yourself up when things don’t go exactly as planned. Things happen. Just pick back up and move on.
I’m looking forward to giving my Instant Pot another try this week with the 21 Day Fix Beef Gyro recipe I found from My Crazy Good Life. The oranges on our orange tree are ripe so I’ve got a Slow Cooker Orange Chicken recipe on the menu as well. If you’ve got any favorite orange recipes or uses for oranges please send them my way!
