The recipes on Blue Apron’s menu have been very enticing lately. Since it’s Summer and we’re not rushing around to activities I’ve got plenty of time to prepare the meals. And they are so worth it. They are truly restaurant quality meals.
This week I’m cooking Basil Pesto Chicken with Summer vegetable panzanella. Not quite sure what panzanella is but it looks delicious. I’m also cooking the Miso-Butter Salmon & Lo Mein Noodles with cucumber & cherry tomatoes. Follow me on Instagram to see the finished dishes and what my family thinks about them.

This week is my husband’s birthday, the big 4-0! My family has a tradition of going out to eat & having cake for birthdays. Since we usually go out for birthday dinners on the weekend I asked my husband what he would like for dinner on his actual birthday. He chose a classic family favorite- King Ranch Chicken.
