February is kicking my butt. Why are so many things packed into such a short month? Needless to say my menu planning has gotten a little lax. We’re still doing Core de Force, and already noticing results, but I’m not using the 21 Day Fix tally sheets to create a portion controlled menu. I’m relying heavily on Instant Pot & Slow Cooker recipes to get dinner on the table.
We’ve kind of started a Valentine’s Day tradition here with shrimp scampi and chocolate fondue for dinner. It’s a simple meal that feels special.
