This week’s Weekly Menu contains some Blue Apron meals and a simple dish that looks and tastes like a gourmet meal but is so easy to make.
Cooking with Blue Apron
Surprise, I’m cooking with Blue Apron again this week. I say surprise because I didn’t know I had a shipment coming until I saw the fee on my bank statement.
Since Blue Apron is a subscription service you get shipments every week unless you cancel them. I wish it worked in reverse. Every month I usually go in and review the menus and cancel the weeks I don’t want. I guess I hadn’t gone in and done it in awhile. October seemed to fly by.

“No Work” Chicken
I’ve made this “No Work” Citrus Chicken by Blair at The Seasoned Mom before and it is so good. It looks like a dish you went to a lot of trouble to make but it is so simple, the oven does all the work. It would be a great dish to serve for company. It’s also good for week nights at home. Just pop it in the oven and then you can work on spelling or other homework.
