Hosting a party where everyone shows up already hung over is pretty rare, but that is exactly what happened at last year’s Super Bowl Party. My husband is part of a BBQ Cook-off team that competes in our city’s cook-off competition. No, we’re not competing at the Houston Livestock Show & Rodeo Cook-Off. We live in Humble, a suburb just north of Houston. Our team, Smoker & The Bandits, competes in the Humble BBQ Cook-Off. It’s a fun time but it’s also the same weekend as the Super Bowl. Come Sunday many of our Super Bowl Party guests were already hurting. That’s why I decided to plan a menu of hangover foods for our Super Bowl Party.
The perfect drink for a hangover- A Bloody Mary of course! I had so much fun putting together this Bloody Mary Bar. The drinks were as fun to make as they were to consume.
Bloody Mary Bar:
- Bloody Mary Mix
- Pepper Bacon
- Bacon Rim Shot
Chicken & Waffles
This fun appetizer was so easy to put together. I found the idea on Food, Folks and Fun. I used frozen chicken nuggets, mini waffles and served with maple syrup.
Grilled Mac-n-Cheese Bites
Grilled cheese with a twist. These were good and easy to make. A creamier macaroni and cheese would have made these even better. I made the mac-n-cheese and then used it as you would normally in a grilled cheese sandwich. I spray the bottom of my pan with cooking spray, add bread, top with mac-n-cheese, place another piece of bread on top. Let the bottom piece of bread brown then spray the top piece of bread with cooking spray, flip and brown that piece of bread. I then cut the sandwich into 4 squares to make them bite sized.
7 Layer Dip
It’s not a Super Bowl Party without 7 Layer Dip! So easy to make and so delicious. I make my 7 layer dip by layering: fat-free refried beans, guacamole dip, salsa, sour cream, shredded cheese, cilantro, black olives, tomatoes.
For a simple dessert I grabbed these from the grocery store. You can dress them up by adding white icing to make them look like footballs.
